ALMOND JOY PORRIDGE

I’m sorry some of these aren’t precise measurements, but who really uses a measuring spoon when making breakfast… I mean, really? Just throw all of these ingredients into a bowl in the morning, warm it up, and ta-da! Breakfast is served, my friend.


INGREDIENTS:

1/4 cup shredded unsweetened coconut (not the low-fat kind)
1 rounded spoonful almond butter
1/2 cup full-fat coconut milk (or 1/3 cup almond-coconut milk and 1 rounded spoonful of coconut oil)
2 small drops of vanilla extract
1 heaping spoonful of chocolate whey protein powder

Optional:
A small handful of raw whole or sliced almonds to top
A light drizzle of honey or maple syrup if you want it sweeter
A pinch or two of unsweetened cocoa powder if you want a richer chocolate flavor
DIRECTIONS:

1. Combine and mix all ingredients (except for the protein powder and optional toppings) into a single serving bowl and microwave on very low power for 2 minutes.
2. When heated, mix in protein powder and garnish with desired toppings (honey, almonds, etc.)
